Here in Louisiana we love our seafood. Being so close to the coastline we always have fresh seafood available to us. Of course if you walk into most restaurants, options are friend or covered in a yummy fattening sauce. While I love my Cajun dishes, this girl also likes to eat healthy!
So I always try to cook at least one meal with seafood at home. Seafood is a great lean protein source. Throw in the right flavors, and you have a meal on your table in no time!
I picked up this little gem recently at Trader Joe’s and immediately started thinking of ways to use it. It makes a great dip, but cooking with it is so fun!
I tossed some shrimp in a bowl with 2 tbs. olive oil, couple heaping spoons of the mustard, salt, pepper, and Italian herbs. I placed it in the refrigerator to marinate for couple hours.
Next step is to melt a little olive oil and butter in a cast iron skillet. Cook your shrimp in batches until done.
Of course you could enjoy them with various vegetable/side dish options, but we decided to toss them into a salad!
This was over the top delicious! By adding lots of flavor to the shrimp, tossing in a small bit of pasta, and putting them on a huge bed of greens – we were very satisfied. Getting in nutritious food is so much easier when you have flavor!
