Chicken Chili

It is cold here in south Louisiana.  I mean REALLY cold here in south Louisiana, at least for our standards!  I know that it is much colder in other parts of the world, but guys – please keep in mind that we are not use to cold weather.  Nor are we equipped for it.  I mean who spends a lot of money on a winter wardrobe that you would only use it for like a month at the most?

Know what I do spend money on when it is cold?  FOOD!  I love a good bowl of hot, steaming food when it is cold outside….or a cup of hot steaming cocoa, with a little RumChata might I add!  Unfortunately walking around at work drinking that is frowned upon.  So hot, steaming food it is!  This recipe is simple, delicious, and packed with super healthy ingredients.  So feel free to indulge in a bowl or two.

Chicken Chili

  • 2lbs ground chicken
  • Onion, diced
  • 4 cloves garlic, minced
  • 2 tbs ground cumin
  • 1 tbs fennel seeds
  • 1 tbs oregano
  • 1 tbs chili powder
  • 3 tbs flour
  • 2 cans cannellini beans, rinsed & drained
  • 2 cups frozen or canned corn
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Bunch of kale leaves, chopped
  • Parm cheese for serving

Add some olive oil to your dutch oven, sauté onion until translucent.  Add in the ground chicken, garlic, and seasonings – cook until chicken is done.  Sprinkle with flour and cook a minute or two.  Slowly pour in the chicken broth while stirring.  You may need to add a bit of water depending on how thick you like your chili.  Add the beans, corn, and kale to the pot.  Bring to slight boil, lower heat to low, and simmer for about an hour.  Add salt & pepper to taste.  Serve with grated parm on top.

You could also add additional toppings to this that you would have with any other chili or soup.  Think red onions, jalapenos, avocado, etc.  We like to keep the toppings simple and serve with a nice hot cornbread.
