Roasted Cabbage with Parmesan Cheese

We all know that roasting vegetables is the BEST way to cook them, I mean unless you have been living under a rock.  There is just something about roasting that brings out the flavor is so many foods.  Once I discovered roasting years ago, I have never went back to steaming my vegetables.

While this dish is oh so simple, adding the cheese on top just takes it to the next level.  The nuttiness of Parm really brings out this dish!

  • head of cabbage, shredded or sliced
  • olive oil
  • salt/pepper
  • Parmesan cheese

Preheat oven to 425*.  You can either slice or shred your cabbage.  If you are shredding simply toss with a little olive oil, salt, and pepper inside a casserole dish.  If you slice the cabbage, leave it in tact and place on baking sheet.  I like to use a brush to coat with olive oil when sliced.  Sprinkle with salt and pepper.  Roast the cabbage about 25-30 minutes.  Some of it will get nice and golden brown in color – that is my favorite.  When it is removed from the oven shred Parmesan cheese all over the top of it!
