This song rings so true in my house, I am out numbered!

Just one of the reasons that the hubster likes it when I am home all day.  I have time to make wonderful meals such as this.  This is totally a man’s lasagna.  Filled with meat and cheese, just the way he likes it!!

Man’s Lasagna

  • 1lb. ground beef
  • 1lb ground italian sausage
  • 2cloves of garlic, chopped
  • 2 cans whole tomatoes
  • 2 cans tomato paste
  • 2tbs.  parsley
  • 2tbs. basil
  • 1tsp salt
  • 3c ricotta cheese
  • 2 eggs, beaten
  • 1/2c parmesan cheese
  • 2c shredded mozzarella cheese
  • 8 lasagna noodles
  1. Preheat oven to 350, cook pasta noodles in salted water.
  2. Meanwhile, in a large skillet or saucepan, combine ground beef, sausage, and garlic. Cook over medium-high heat until browned. Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt. After adding the tomatoes, the sauce mixture should simmer for 45 minutes while you are working on the other steps.
  3. In a medium bowl, mix ricotta cheese, beaten eggs, grated parmesan, 2 more tablespoons parsley, and 1 more teaspoon salt. Stir together well. Set aside.
  4. Spray pan with non stick spray.  Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary.
  5. Spoon half the cheese mixture over the noodles, spread evenly. 
  6. Cover cottage cheese with a layer of mozzarella cheese.
  7. Spoon a little less than half the meat/sauce mixture over the top.
  8. Repeat, ending with meat/sauce mixture. Sprinkle top generously with extra parmesan.
  9. Bake for 20 to 30 minutes, or until top is hot and bubbly.

This is why is wouldn’t be nothing without woman or girl.  Because the hubster would never be able to make this on his own.  He is more of the grill master.  Oh and the breakfast king.  Yes, I will be kind enough to give him those titles without regret.  Because let’s face it, I love when he cooks.  It gives me time to sit back and enjoy a glass of wine!

AND…because I live in a man’s world I am so appreciative of girl’s night out :o)
