WIAW – (he ate it too)

Happy What I Ate Wednesday!  Let’s take a moment to give a round of “Applause” (insert clapping joyfully) for our wonderful host Jenn.  If you haven’t checked her out yet, then head over there now, that is an order…lol!  I promise you will be delighted with what you see 🙂

Breakfasts:   berries & cream oats, peaches & cream oats, pear dutch baby (recipes coming soon)

Lunch: veggie stuffed potato, salads, leftovers

Snacks:  green monsters, parfaits, pears (from my lovely tree!)

Dinner:  eggplant steaks, Mama Pea’s tamale pie, grilled shrimp

Dessert:  spiced peach & carrot bread, peanut butter-banana-chocolate chip pizzert (oh yes I went there!)

Drinks:  pecan praline coffee (a fav), water


So in yesterday’s post I delved a little in the controversial subject of meat.  I have a goal of adding more meat free dishes into our menu, and I am glad to say that I have been able to do so.  Of course being married to an avid meat eater makes that goal more difficult.  The hubster knows how I feel on the subject, but he still insists on eating his meat.  So I quit asking/talking about it, and I just started cooking.  I am proud to say that I have fed him two meat free dishes successfully 🙂

Monday night’s dinner was a no brainer, I knew he would eat the eggplant.  It is basically like eggplant parmesan without the frying and such.  That didn’t worry me.  Last night’s dinner did make me a little nervous.  Thanks to the wonderful Mama Pea, I pulled it off!

I used Mama Pea’s tamale pie recipe (you must try this!) with only two changes.  Due to not being able to find tempeh locally, I used Morning Star’s  “meat crumbles”, and because we love cheese I used the real stuff.  The hubster loved it!  He had no idea that he was eating a vegetarian meal.  He even requested to take some of the leftovers for lunch.  Now of course I will inform him that is is a vegetarian meal later.  I like to let him sit on how good it was for a little while before dropping that bit of info  🙂

Now those of you that missed yesterday’s post, you may be wondering why I have shrimp if I am trying to include more vegetarian options.  Well, the shrimp was fresh!  I will and do eat meat when I am comfortable with the source.  Such as venison that the hubster brings home from hunting.  As well as the seafood we get from our him or our neighbor.  I am comfortable with that because I know that it is natural and free of substances that are pumped into commercial meats.

So there you have it.  What I ate and what he ate too!

  1. What I wouldn’t give to have fresh shrimp!
    That tamale pie has been on my want to make list for a while, but like you, I could not find the tempah. Good to know that you can use the MS’s crumbles! I am going to try to get my hubby to eat less meatl I am going to suggest the meatless Monday plan!
