One Fish, Two Fish, Red Fish…..for dinner

I have totally enjoyed my day today. It was the first day in weeks that I have been able to lounge in my pajamas, sip on some wonderful coffee, catch up on reading, and just be lazy:)

I must say that I have consumed a little more caffeine today than normal.  I usually stick to my one-two cups in the morn; however, this afternoon I needed a little pick me up…….introducing Helen’s frappe!!
Who needs Starbucks?

This is an easy blend: 

1. 1/4 cup diced frozen banana

2.  1 scoop chocoloate whey protein powder

3.  1 single packet instant coffee granules

4.  1/2 cup almond milk

                                                                                  5.  1/2 cup ice

Put all ingredients in blender and blend!

My husband is an avid fisherman (hunter as well), so he caught dinner yesterday!  Introducing the star of the night……red fish. 

The fish took a lovely swim for several hours in a marinade of 2 tbs. soy sauce, 1 tbs. rice wine vinegar, 1 tsp. ground ginger, 2 tsp. sesame oil, and 2 cloves of garlic, minced.

After the lovely swim, the filets were placed in a baking dish and generously seasoned with cajun spices!

Then placed in the oven at 350 for 25 minutes.

Of course the fun part was getting creative with the remainder of the dinner items……..

But before we start dinner let’s keep with Saturday tradition and enjoy a glass of vino!

BEHOLD….the lovely cabbage!  I picked this baby up at the grocery yesterday, so I just had to cook some of it.  So we enjoyed a nice Cabbage Casserole 🙂

Take 8 cabbage leaves and blanch them in boiling water for five minutes. 

1 pkg frozen mixed veggies of your choice – steamed and seasoned to your taste

1/4 cup bulgar cooked according to pkg directions

1 8oz. can tomato sauce

Parm cheese

Place half of tomato sauce in pan, place 4 cabbage leaves in the bottom.  Mix together bulgar and veggies, sprinkle with parm cheese.  Place filling on top of cabbage leaves, the use remaining 4 cabbage leaves to cover the top.  Pour remaining sauce on top of cabbage, sprinkle with cheese, cover and bake at 350 for 30 minutes.  Of course I sprinkled shredded cheese on the hubsters side!

We also enjoyed some yummy lentils cooked in chicken broth with garlic and herb seasonings and a slice of Great Harvest Bread Co.’s honey wheat bread!

Of course since it is Saturday night we used the nice dinnerware!

And in keeping with Saturday tradition…….

Next up:  Dessert!!
